Full Job Description
Daylesford Organic pastry chefs produce the highest quality patisserie products for sale in our retail outlets, cafes, and via our wholesale customers,
- Continually strive towards the improvement in quality of Patisserie products
- Ensure consistently high quality, including the implementation of a continuous improvement programme
- Have direct involvement in the production of all Patisserie products, leading by example in delivering their expert execution
- Aid in the proposal and development of new products, a process led by the Executive Pastry Chef and in conjunction with the NPD Team, to deliver exciting innovation to our consumers
- Manage sourcing and maintenance of equipment and consumables, ensuring that the correct reporting tools are used to reach as efficient a resolution as possible in all cases
- Lead the team and implement processes for food safety and traceability in line with the Daylesford Quality Management System
- Be fully competent and have full involvement in all areas of the Patisserie operation, from the intake of ingredients right through to the packing and dispatch of finished goods
- Respond to complaints and requests for information in a timely manner
- Ensure the Patisserie team carries out all baking duties with care and diligence to guarantee the production of a consistently high standard of product, along with minimal levels of wastage
- Ensure that cleaning rotas are adhered to at all times
- Maintain a safe workplace for both staff and customers, ensuring we are fully compliant with H&S regulations
- Share in the ownership of the P&L for the Patisserie, driving sales and reducing costs
- Manage recipes, costing, stock counting and production records for financial accuracy
- Ensure fulfilment of orders, including scheduling, staffing and raw material stocks
- Act as a secondary point of contact for Patisserie audits and hold responsibility for legal compliance, both internal and external
- Line-manage, develop and motivate the Patisserie team (including Pastry Chefs, Production Assistants, Packing Assistants and Kitchen Porters)
- Complete all People admin and processes for the team in a timely manner

Develop, train and coach the Patisserie team through performance review and personalised learning & development
Ensure that staff complete all mandatory training in the required timescales
